Introduction:

Rou Gui, also called Cassia Oolong, Wu Yi Cassia Oolong, Bohea Cassia, Yu Gui or Jade Cassia Oolong, is a one of the most famous Wuyi Yancha (Wuyi Rock Tea). It also belongs to the most famous Chinese oolong tea group. Rou Gui, along with Tie Luo Han, Shui Jin Gui, Da Hong Pao and Bai Ji Guan are called Wuyi’s five famous bushes.

Rou Gui Yancha (Cassia Oolong) was first produced during the Qing Dynasty (1644-1911). The dried tea leaf has a long, curly appearance resembling iron shards in the dark, greeny-brown color and they sometimes carry the subtly sweet and spicy aroma of cassia, a cinnamon - like bark and this is why it is sometimes called Cassia Bark Oolong. The tea produces amber-colored liquor which has a strong fruity aroma with a long lasting, sweet after-taste.

Preparation Methods:

1. Put 5g Wuyi Yancha (Wuyi Rock Tea) into a 100ml ceramic tureen (Gaiwan);
2. Pour into the tureen 100°C water;
3. Brew for 20 seconds for the first brewing, longer time for the following brewing;
4. The Wuyi Yancha (Wuyi Rock Tea) stands up to more than ten brewing.
